Since we are discussing veggies and food waste........use your veggie scraps to make your own vegetable stock. Save all your scraps from onions, celery, peppers, carrots,etc. - basically, anything you would use in soup. Do not use stronger flavored vegetables like broccoli or cauliflower as this can give the broth a bitter taste. Place the vegetable scraps in a plastic bag (or better, in a reusable container) and store in the freezer. When your container is full, put the veggie scraps in a large pot of water, add some salt & pepper, maybe some oregano and boil for 15-20 minutes. You have just used scraps to make veggie stock!
